Origin & history
Au tau porridge has roots in traditional medicine used by the Hmong and Tay communities of Ha Giang for centuries. The aconite plant (au tau) is a powerful herb in TCM used to treat cold, numbness, and pain. Locals learned to detoxify it through prolonged boiling, transforming it into a warming winter staple.

Only eat from established stalls with many local customers. The properly prepared version is safe — do not attempt to cook au tau yourself.
