    Overview

A giant, crispy sizzling rice crepe stuffed with shrimp, pork, and bean sprouts — eaten wrapped in lettuce and herbs

Bánh Xèo is Vietnam's showstopper street food — a large, golden crepe made from rice flour batter tinted yellow with turmeric, sizzled in a hot pan until paper-thin and crackling crisp, then folded over a filling of shrimp, sliced pork, and crunchy bean sprouts. The name means 'sizzling cake', named for the loud hiss the batter makes when it hits the pan. Diners tear off pieces and wrap them in mustard leaf or rice paper with fresh herbs, then dip into a tangy, sweet-savory nước chấm sauce.

    The story

    Origin & history

Bánh Xèo is believed to have origins in central Vietnam (particularly Huế and the south-central coast) but has been adopted and perfected in southern Vietnam, where Saigon’s version is notably larger and crispier than its central or northern counterparts. The turmeric-yellow crepe is a hallmark of the southern style, and the dish has become one of the most recognizable staples of Saigon street food culture. Iconic spots like Bánh Xèo 46A have been serving it for decades.
