    Overview

A Saigon-Chinese noodle soup of braised duck in a dark, herbaceous broth with egg noodles

Mì Vịt Tiềm is a beloved Saigon noodle dish with deep Chinese roots — a rich, dark broth slow-cooked with five-spice, star anise, dried shiitake, goji berries, and red dates, served over springy yellow egg noodles and crowned with a fall-off-the-bone braised duck leg. The herbal complexity of the broth sets it apart from every other Vietnamese noodle soup, making it a unique fixture of Saigon’s Cantonese-Vietnamese food culture.

    The story

    Origin & history

Mì Vịt Tiềm was brought to Saigon by Cantonese (Guangdong) Chinese migrants who settled in Chợ Lớn and southern Vietnam. The dish is an adaptation of Chinese braised duck noodle soup, localized with Vietnamese herbs and ingredients over generations. It remains strongly associated with Saigon’s Chợ Lớn district and the city’s vibrant Chinese-Vietnamese community, and is rarely found in northern or central Vietnam.
