    A classic Hue specialty made from fresh river shrimp fermented with sticky rice powder, galangal, garlic, chili, fish sauce, and rice wine until tangy, aromatic, and deeply savory. Brought to Hue by Queen Mother Tu Du from Go Cong in the early 19th century, it was so beloved by emperors Thieu Tri and Tu Duc that it was served at imperial banquets. Today it remains a defining taste of the ancient capital, eaten with boiled pork, white rice, pickled bean sprouts, fresh herbs, and green banana.

    The story

    Origin & history

    Mắm tôm chua originated in Go Cong in southern Vietnam and was brought to Hue by Queen Mother Tu Du in the early 19th century. The dish quickly won the favor of Emperor Thieu Tri and Emperor Tu Duc, who ordered it served at imperial banquets. During the Nguyen Dynasty it was refined to suit royal taste, then gradually spread to become a staple of everyday Hue cooking.

    Mắm tôm chua is sold by the jar at markets and specialty shops — choose jars with clear brine and plump shrimp. Sizes range from small single-use portions to larger take-home jars. Ask the vendor how many days of fermentation it has been through; 3–5 days is typical for optimal sourness. Available year-round but freshest in months 2, 3, 5, and 10 when the best shrimp varieties are in season.

    Cash is safest at markets and family stalls. Carry small notes (20,000–50,000 VND). Some specialty shops accept QR payment.
