    Overview

A soul-warming noodle soup with Cambodian roots and a distinctly Saigon soul

Hủ Tiếu Nam Vang is a beloved southern Vietnamese noodle soup tracing its roots to Phnom Penh (Nam Vang in Vietnamese), brought to Saigon by Chinese-Cambodian migrants in the early 20th century. It features silky rice noodles (or egg noodles) in a clear, deeply sweet pork bone broth, topped with sliced pork, minced pork, shrimp, quail eggs, liver, and crispy shallots. A squeeze of lime, fresh herbs, and bean sprouts on the side let diners customize every bowl. Lighter than phở and more complex than bún, it remains one of the defining breakfast and lunch dishes of Ho Chi Minh City.

    The story

    Origin & history

Nam Vang is the Vietnamese name for Phnom Penh, Cambodia. The dish originates from kuy teav, a Cambodian noodle soup popularized by ethnic Chinese vendors in Phnom Penh. When Chinese-Cambodian migrants settled in Cholon and Saigon in the early 1900s, they brought the recipe with them. Vietnamese cooks adapted it — using local rice noodles, a cleaner pork bone broth, and adding shrimp and quail eggs — creating a uniquely Vietnamese version that became a staple of southern street food culture.
